Highchair Travelers: Pancake Day!

pancake day featured copyTomorrow is Pancake Day in England! More officially known as Shrove Tuesday, it’s the last day before Lent starts, it’s also a great day to fill up on creamy, eggy crepes, since they will be off-limits during Lent.

So take the excuse to make yourself some crepes (the type of pancake traditionally eaten on Pancake Day) for dinner and celebrate in style with the British.

Our favorite crepe recipe comes from our beloved Chinese Ayi (ironically), who learned to make the world’s best pancakes while working for a Swedish family in Beijing. But feel free to use your own favorite crepe recipe instead.

Ayi’s Crepes

2 eggs

1 c flour

1 c milk

1/4 t salt

2 T melted butter

Mix all thoroughly (we use the blender) and pour about 1/3 c into medium pan sprayed with cooking spray. Tilt and swirl pan to spread batter evenly over bottom of pan.

Cook over medium-high heat till dry on the bottom, about 2 minutes, flip to other side (we use a plate–Ayi just flipped. Magical.) Cook till finished.

Crêpe_opened_upServe with butter, whipped cream, fruit, powdered sugar, or if you want to be really authentic, golden syrup. Good luck finding golden syrup in America. Seriously.
